12oz pre-cooked large elbow macaroni
1 1/4 cup whole milk
1 cup heavy whipping cream
4-6 oz lager or amber ale
4 oz cheddar
4 oz Gouda
1 tsp nutmeg
1 clove garlic halved
salt and pepper to taste
Pre-heat oven to 375 degrees. Rub exposed side of garlic on inside of 9x12 baking dish, set aside
Heat milk and cream on medium heat to a light simmer. Add beer. Add nutmeg and salt and pepper. Let simmer 10 minutes. Add cheese. Let cheese melt until a sauce is formed. Add sauce to pre-cooked noodles in large bowl. Mix until noodles are completely coated.
Transfer sauce and noodles to baking dish. Cook for 30 minutes. You know it's ready when the sauce is bubbling. Remove from oven and let sit for 15 minutes.
